Fortune et statut social d’un marchand du XVIIIe siècle

A L’époque moderne, et au xviii^e siècle notamment, l’épicerie est considérée comme un commerce de luxe et les épiciers s’intègrent bien souvent à l’élite marchande de leur cité. Au Mans comme dans les autres villes, ils figurent parmi les corps de métier les plus en vue, qui bénéficient notamment d’une place avantageuse lors des défilés et des processions ² même si le fait d’être épicier au Mans ne représente pas le même prestige en termes de fortune ou de position sociale qu’être épicier à Paris, à Nantes, ou même à Angers. Durant ce siècle de changement et d’évolution qu’est le xviii^e siècle, le nombre des épiciers demeure, au Mans, stable et relativement moyen. On dénombre ainsi 16 épiceries à l’extrême fin du xvii^e siècle, une bonne vingtaine à la fin des années 1720 mais seulement 14 en 1742 puis 17 à l’orée des années 1780. Il s’agit de chiffres très moyens comme en témoigne d’ailleurs la proportion du nombre d’épiciers par rapport à la population de la ville puisqu’on trouve environ un épicier pour 1 000 habitants – la proportion se tassant même légèrement à la veille de la Révolution – alors qu’Angers compte, avec une bonne trentaine d’épiceries, un épicier pour 700 à 800 habitants, et Nantes, avec plus de cent épiceries, un épicier pour 500 à 600 habitants. Ce niveau moyen s’illustre dans bien des domaines : d’un point de vue social, les épiciers manceaux ne participent que très peu à la municipalité ou à la milice bourgeoise, et du point de vue de la fortune, ils vivent dans une confortable aisance mais ils apparaissent comme beaucoup moins riches que certaines catégories de marchands, les négociants en étamine ou les ciriers par exemple ³

Au sein de ce petit groupe, un homme va cependant, durant une quarantaine d’années, se détacher très nettement et faire figure de véritable négociant, digne des riches épiciers nantais. Épicier place des Halles du milieu des années 1720 jusqu’à sa mort, survenue en 1767, Louis Hermé connaît, à l’échelle de la ville, un parcours exceptionnel, tant par sa réussite sociale que par la constitution d’une fortune relativement considérable. Par bien des aspects, il est semblable aux autres épiciers de la ville : comme 70 % de ses collègues, il est issu d’un milieu marchand, comme 82 % des épiciers de sa génération, il est natif du Mans, et comme 33 % d’entre eux, il exerce paroisse de La Couture, dans le centre économique de la ville que constitue la place des Halles ⁴ pourtant, son destin en fait un sujet d’étude particulièrement intéressant.

La famille Hermé

Épicier « aristocratique » ⁵ Louis Hermé est issu d’un milieu aisé et déjà bien intégré dans la notabilité urbaine, ce qui n’est peut-être pas sans expliquer sa réussite. Le tableau généalogique (figure 1) donne un aperçu de ses origines.

Vraisemblablement d’origine normande ⁶, la famille Hermé est connue, au Mans, depuis le début du xvii^e siècle au moins. Le premier ancêtre connu, prénommé Louis également, est marchand de toiles au Pont-Neuf. Ses descendants sont marchands merciers et drapiers. Ils figurent donc parmi les marchands aisés de la ville. Le grand-père de Louis, Philippe Hermé, marchand mercier-drapier, est d’ailleurs échevin et procureur de la fabrique de Saint-Pierre-la-Cour au moment de son décès en 1684, preuve de cette intégration à l’élite ⁷. Celle-ci est aussi perceptible dans l’observation des alliances qui unissent les Hermé à la bourgeoisie marchande et officière de la ville : on relève des unions avec les Bérard, fondateurs de la blanchisserie de Pontlieue, avec les Le Romain, famille de riches ciriers, et avec les Georgie, avocats au Présidial ⁸.

Le père de Louis Hermé, Michel, reprend, au cours des années 1680, le commerce paternel de mercerie. Marchand assez dynamique et relativement riche – le partage de ses biens immobiliers en 1743 s’élève à 22 000 livres ce qui, sans être considérable, reste assez important pour l’époque et la ville⁹, il poursuit l’ascension de sa famille et est nommé administrateur de l’Hôpital Général en 1708. En 1686, il réalise une belle alliance en épousant Françoise Renault fille de Mathurin Renault, marchand épicier-droguiste, par qui le commerce d’épicerie va entrer dans la famille.

Du côté maternel, Louis Hermé est donc aussi issu du monde marchand et l’assise de la famille Renault est, elle aussi, plutôt confortable. Mathurin Renault, mort en 1695, est en effet, à son époque, l’un des épiciers les plus en vue de la ville comme le sera son petit-fils au siècle suivant. Marguillier de sa paroisse et juré-garde de la communauté des épiciers à plusieurs reprises, il fait déjà figure de notable. Ainsi, soucieux de bien marquer son rang, il offre, par son testament, un autel à l’église de la paroisse de La Couture, où il demeure ¹⁰ .

L’inventaire de ses biens n’est réalisé que cinq ans après son décès mais fait état d’un actif, en meubles et marchandises, de plus de 4 000 livres, soit un niveau de fortune déjà élevé par rapport aux autres épiciers manceaux de la fin du xvii^e siècle ¹¹.De plus, Mathurin Renault est propriétaire de trois maisons au Mans, dont deux épiceries (la « Chasse Royale », où demeure la famille Renault, acquise en 1674, située sur la place des Halles, et l’épicerie où pend pour enseigne « La Pucelle d’Orléans », située carrefour des Quatre Vents à proximité de cette même place). Il possède aussi une ferme et six quartiers de vigne paroisse Saint-Vincent ainsi qu’une autre ferme paroisse Sainte-Croix ¹² Il fait donc figure de riche marchand.

De son mariage avec Françoise Bourné, également fille d’un marchand, il a deux filles. L’aînée, Jeanne, épouse Charles Orry, licencié en droit. Dix jours après la signature de leur contrat de mariage, Charles Orry intègre la communauté des épiciers, son beau-père, alors juré-garde de la communauté, l’ayant fait recevoir marchand maître épicier apparemment sans véritable formation ¹³^.Une fois encore, c’est le rang de Mathurin Renault au sein de la communauté des épiciers qui lui permet de parvenir à ses fins. Charles Orry et Jeanne Renault sont les ancêtres des riches ciriers Orry ¹⁴. La fille cadette de Mathurin Renault, Françoise, est l’épouse de Michel Hermé. Chacune des deux filles est dotée de 5 000 livres ¹⁵ , somme assez importante à l’échelle des épiciers manceaux : au xviii^e siècle, ceux-ci n’offrent généralement pas plus de 3 500 livres de dot, en moyenne, à leurs enfants ¹⁶ Jeanne Renault reçoit, en outre, l’épicerie de La Pucelle d’Orléans, paroisse de La Couture ¹⁷, où le couple Orry va exercer son négoce. Le couple Hermé s’installe, quant à lui, place des Halles.

Pour Michel Hermé, ce mariage est l’occasion de s’intéresser de très près au commerce d’épicerie. En tant que mercier, ce commerce lui est, en principe, interdit mais, vivant comme sa belle-mère place des Halles, il va néanmoins saisir l’occasion de s’en mêler. En avril 1712, alors qu’elle y avait renoncé une quinzaine d’années plus tôt, Françoise Bourné veuve Renault déclare, devant le juge de police, vouloir reprendre le commerce de son défunt mari comme l’y autorisent les statuts de la communauté des épiciers ¹⁸. Elle explique alors qu’elle a acheté, pour ce faire, quelques marchandises d’épicerie à … Michel Hermé, pourtant mercier ! Il est probable que celui-ci pousse sa belle-mère, septuagénaire, dans cette voie, pour pouvoir se mêler des deux négoces. Mais la communauté des épiciers réagit violemment. Au début du mois de juin 1712, plusieurs épiciers et leurs épouses se présentent devant la boutique de la veuve Renault pour saisir les marchandises et lui interdire de poursuivre son commerce. Françoise Bourné refusant d’ouvrir, les épiciers « suivis d’une troupe de peuple (…) se sont jetés avec violence sur le rebord de la boutique », cassent le mobilier et pillent les marchandises, violentent même la fille de Françoise Bourné, et insultent les personnes présentes. L’action est portée en justice et, si Françoise Bourné peut poursuivre son négoce, Michel Hermé se voit interdire le commerce d’épicerie ¹⁹, ce qui ne l’empêche pas, à l’occasion, de se qualifier de « marchand épicier » ²⁰

À défaut de pouvoir l’exercer lui-même, c’est son fils, Louis, qui devient épicier à la fin des années 1720. Né paroisse de La Couture en 1708, il commence des études au collège de l’Oratoire²¹,études qu’il poursuit peut-être dans une autre ville lorsque son frère aîné, François Hermé, futur curé du Luart, quitte lui-même Le Mans. Après ses études, il est probable que, comme ses collègues marchands ²² , il entre en apprentissage, peut-être chez son père ou chez sa grand-mère, aucun contrat d’apprentissage ne nous permettant d’éclairer la période de formation professionnelle. Quoi qu’il en soit, le décès de sa grand-mère, à 86 ans en 1728, lui donne l’occasion de s’établir, après avoir acquis une coûteuse lettre de maîtrise payée 1 100 livres parce qu’il n’est pas fils d’épicier ²³

Une boutique de luxe

Louis Hermé s’installe immédiatement dans la boutique de la place des Halles, héritée de sa grand-mère et dont il devient véritablement propriétaire quelques années plus tard lorsque ses parents la lui cèdent à titre de dot. Située à l’angle de la rue de la Perle (cf. carte, figure 2), elle figure parmi les riches épiceries de la ville puisque située dans le centre économique de celle-ci ²⁴

Parti d’un niveau élevé, Louis Hermé va révéler tous ses talents dans l’exercice de l’épicerie. Son inventaire après décès, dressé entre juillet 1767 et mai 1768, est l’occasion de mesurer l’étendue de son commerce ²⁵Ce document, de plus de 130 pages, dont la moitié est consacrée aux marchandises et effets de commerce, révèle une activité de première ampleur. Outre sa boutique, qui donne sur la place même, Louis Hermé exploite six magasins et une cave pour stocker ses marchandises, sans compter les nombreux produits dispersés dans plusieurs pièces de la maison. La gamme de produits est impressionnante : au total, près de 150 types de marchandises sont recensés par le notaire. C’est en moyenne plus de deux fois plus de produits différents que chez ses collègues manceaux de cette époque, même si la variété demeure toutefois moins grande que chez les épiciers angevins et, surtout, nantais ²⁶

Cela dit, à l’échelle de la ville, l’épicerie Hermé est sans doute la mieux achalandée. Au commerce de détail, Louis Hermé joint le commerce de gros : son stock est évalué à plus de 20 000 livres soit près de 30 % de l’avoir mobilier de l’épicier, et certains produits sont présents en quantités relativement considérables – 200 livres de poivre, plus de 5 000 livres de sucre, 5 800 livres de savon, autant d’huile, notamment.

À cette diversité de produits, qui fait du commerce de Louis Hermé une véritable épicerie de luxe, s’ajoutent des réseaux commerciaux assez étendus. Alors que la plupart de ses collègues ne se fournissent guère au-delà des villes proches du Mans (Tours, Angers, Falaise, Caen et, dans une moindre mesure, Nantes), Louis Hermé est en relation d’affaires avec des négociants de Marseille, La Rochelle, Limoges, Orléans, Rouen… Il s’apparente donc encore en cela aux épiciers angevins et nantais dont les réseaux commerciaux, loin de se cantonner à l’ouest du pays, s’étendent parfois jusqu’au Nouveau Monde ²⁷. Sa clientèle, surtout composée de notables (nobles bien sûr, ecclésiastiques, notaires et hommes de loi, officiers, marchands, etc.) se rencontre dans l’ensemble du Haut-Maine. Elle correspond, en cela, totalement au niveau social de l’activité d’épicier : commerce de luxe et considéré comme tel par les contemporains, il s’adresse avant tout à une clientèle aisée que Louis Hermé côtoie, du reste, quotidiennement.

Un homme aisé

La réussite de Louis Hermé, combinée à son origine sociale, explique en partie un niveau de fortune relativement élevé, particulièrement à l’échelle des épiciers manceaux. Cette fortune s’est probablement construite peu à peu. Deux contrats de mariage et deux inventaires après décès, ainsi que la vente des biens immobiliers, permettent de prendre la mesure de la richesse de notre homme et de son évolution.

Lors de son premier mariage, en 1737, son apport s’élève à 12 000 livres : 3 000 livres qu’il a gagnées dans son commerce, 4 000 livres de dot que ses parents lui donnent en argent, meubles et marchandises, et la maison de la place des Halles, évaluée 5 000 livres ²⁸. Le niveau est encore moyen – il est moins bien doté que les enfants du riche étaminier Véron, par exemple ²⁹ – mais demeure supérieur à celui de ses collègues manceaux qui, pour l’ensemble du siècle, entrent en mariage avec un apport moyen de 6 300 livres et, pour la période 1730-1759 à laquelle Louis Hermé se marie, avec 2 700 livres seulement. En 1762, Jeanne Racois, son épouse, décède. Aucun inventaire n’est alors dressé mais tout porte à croire que la fortune a considérablement augmenté. En effet, en l’absence d’enfant, c’est Louis Hermé et la famille de son épouse qui se partagent les biens, suivant le testament de Jeanne Racois. Cependant, le neveu de celle-ci, Jean-Gabriel-François Lemore, officier à Bonnétable, remarque alors que Louis Hermé « ne l’entretenait que de ses dettes passives sans lui donner aucune connaissance de l’actif » et explique qu’il « y a tout lieu de présumer que ledit sieur Hermé, qui a des effets assez faciles à détourner, ne continue de le faire ». Par mesure de précaution, il demande l’apposition des scellés. Une telle prudence et un tel secret laissent penser que, comme bien des marchands dissimulant leur capital investi dans le commerce, Louis Hermé ne souhaite pas révéler une fortune sûrement assez importante. Il finit d’ailleurs par trouver un compromis avec sa belle-famille³⁰

Trois ans plus tard, l’occasion nous est donnée de vérifier cette hypothèse d’une fortune considérable : en 1765, à 57 ans, il convole en secondes noces, et déclare alors disposer d’une fortune de 100 000 livres en argent, meubles, marchandises et effets de commerce ³¹ ! Une telle somme le situe évidemment au niveau des riches négociants de la ville et largement au-dessus de ses collègues : à la même époque, ceux-ci ne déclarent guère plus de 3 000 livres de biens au moment de leur mariage et, sur 271 contrats de mariage d’épiciers étudiés au Mans, à Angers et à Nantes, seul un épicier nantais dispose d’un apport supérieur à celui de Louis Hermé³². En 1767, Louis Hermé décède. Son inventaire après décès permet de confirmer ce niveau de fortune : l’actif mobilier dépasse 76 000 livres, somme à laquelle il faut ajouter les biens immobiliers (la maison du Mans, des maisons de maître et bordages paroisse Sainte-Croix…) qui sont vendus pour plus de 30 000 livres quelques années plus tard. L’inventaire du mobilier permet d’ailleurs de mesurer combien Louis Hermé appartient à la bourgeoisie, de par son mode de vie : on note ainsi la présence d’objets liés à la sociabilité (tables de jeux, nombreux fauteuils dont une bergère, un sofa, services à thé et à café, etc.), des ustensiles de cuisine qui supposent une alimentation plus variée que celle du menu peuple (tourtières, poissonnières, compotiers, coquetiers, cafetières…), du linge de maison en abondance et de nombreuses pièces d’argenterie³³. L’observation des rôles d’imposition ne fait que confirmer cette aisance et cette place privilégiée au sein du groupe : il s’acquitte de 35 livres de taille en 1764 par exemple, alors qu’à cette date, la cote moyenne de ses collègues ne dépasse pas 15 livres.

Un notable

Outre la fortune, Louis Hermé jouit d’une grande considération sociale. Ses deux mariages sont brillants. Le premier lui permet de s’allier au monde des offices et des hommes de loi : Jeanne Racois est fille d’un notaire des environs du Mans. Elle n’apporte que 1 500 livres de dot, ce qui est peu, mais l’alliance vaut surtout pour le milieu social dont est issue Jeanne Racois. Son second mariage est plus brillant encore : il épouse, à Guibray près de Falaise, Jacqueline-Jeanne-Françoise Philippe-Desparts, de 35 ans sa cadette ! Elle est la fille d’un négociant de Falaise, François Philippe, sieur des Parts ³⁴et de Jeanne Malfillâtre, issue d’une famille noble connue depuis le Moyen Âge et ayant donné plusieurs maires et échevins à la ville de Falaise ³⁵, 71 personnes signent, chez les Philippe, le contrat de mariage, parmi lesquelles plusieurs oncles et cousins de l’épouse qui, tous, s’intitulent « sieur de » et portent le nom d’une terre ³⁶ .Cette alliance témoigne pleinement de la place que Louis Hermé s’est acquise dans la société.

Par ailleurs, Louis Hermé occupe plusieurs charges de responsabilité dans la ville, plus que la plupart de ses collègues, et fait figure de notable. À cinq reprises, il est élu juré-garde de la communauté des épiciers et quatre de ses mandats sont consécutifs. Quatre fois, il est élu à la juridiction consulaire, ancêtre du tribunal de commerce. Consul à trois reprises (1747, 1756 et 1761), il est Grand Juge en 1764. Ces élections sont importantes car elles lui permettent d’accéder à la gestion du commerce de la ville qualifiée par Jean-Baptiste Leprince d’Ardenay de « flatteuse distinction » ³⁷ . Louis Hermé ne reste d’ailleurs pas passif mais prend son rôle très au sérieux, et intervient régulièrement dans les débats. En 1750, toutes les paroisses de la ville l’élisent pour l’un des administrateurs de l’Hôpital Général, nouvelle étape du cursus honorum. Enfin, la reconnaissance suprême vient en 1765 : il est nommé conseiller à l’Hôtel de Ville du Mans. Cette accession est importante : un seul autre épicier manceau – Marc-Olivier Faguer – parvient à entrer à l’Hôtel de Ville³⁸et Louis Hermé ne manque pas de rappeler ses titres dans tous les actes de la vie quotidienne, se faisant qualifier, lors de son second contrat de mariage en 1765, de « négociant, ancien administrateur, président en la ville du Mans, et conseiller en l’Hôtel de Ville dudit lieu ». Le parcours est exemplaire.

Le devenir de l’épicerie Hermé

Louis Hermé décède en juillet 1767 dans sa maison de la place des Halles. Sa succession est aussitôt ouverte et l’épicerie continue de fonctionner, sous la direction de sa veuve, assistée d’un facteur, François Riffier, au service des Hermé depuis plusieurs années déjà. Jacqueline-Jeanne-Françoise Philippe-Desparts maintient l’activité au même niveau que précédemment et l’épicerie est toujours l’une des principales de la ville : sa clientèle demeure la même et la cote de taille de la veuve Hermé va même dépasser celle de son époux – en 1774, elle s’acquitte ainsi de près de 40 livres. Cependant, elle décède prématurément en 1775. Le nouvel inventaire dressé à cette date fait état d’un actif de 71 000 livres soit un niveau semblable à celui observé quelques années plus tôt ³⁹ . Le fils unique de Louis Hermé et de Jacqueline-Jeanne-Françoise Philippe-Desparts – Louis Hermé a perdu tous ses autres enfants en bas âge, y compris ceux du premier lit – étant âgé de 9 ans, les tuteurs et curateurs font vendre l’ensemble des biens.

L’épicerie est alors reprise par le facteur des Hermé, François Riffier, pour qui il s’agit d’une véritable occasion de promotion. Cependant, épicier beaucoup plus modeste – lors de la signature de son contrat de mariage en 1776, il déclare ne posséder que 2 000 livres de biens – il n’a vraisemblablement pas le même sens des affaires que Louis Hermé et l’épicerie n’a plus, dès lors, qu’une importance secondaire. Le fils de Louis Hermé, quant à lui, également prénommé Louis, abandonne le commerce d’épicerie. En 1786, sa demande d’émancipation est rejetée par les membres de sa famille qui « ne le croient pas capable d’avoir l’administration de ses biens », soulignent son inconduite et souhaitent le voir quitter sa pension de la paroisse Saint-Vincent pour en prendre une plus convenable ⁴⁰. En 1792, il épouse à Lavaré ⁴¹, près de La Ferté-Bernard, Louise Foneau sans qu’aucun membre de sa famille ne soit présent, et il s’établit comme marchand à La Ferté-Bernard⁴².

Au total, Louis Hermé apparaît donc comme un marchand hors du commun, particulièrement à l’échelle des épiciers manceaux. Certes, comme nous l’avons vu, il est, par bien des aspects, représentatif de l’ensemble de ses collègues, notamment au niveau de ses origines géographiques et sociales. Cependant, il fait clairement figure d’exception au sein de ce petit groupe, tant par l’étendue de son commerce et sa fortune que par son statut social. Alors que nombre de ses confrères manceaux ont un niveau que l’on pourrait qualifier de moyen, dans beaucoup de domaines, Louis Hermé s’apparente plutôt aux épiciers d’Angers. Effectivement, la comparaison entre les épiciers manceaux, angevins et nantais met très nettement en évidence les différences qui peuvent caractériser ce groupe d’une ville à l’autre. La première tient à la structure juridique du métier : organisé en jurande au Mans comme à Angers, il s’exerce librement à Nantes. Cette différence explique sans doute les contrastes numériques constatés entre les trois villes. L’installation est facilitée à Nantes et, dès lors, les épiciers y sont particulièrement nombreux, en comparaison d’Angers et, surtout, du Mans. Dans l’exercice même du métier, les épiciers des trois villes ont un comportement très dissemblable. Alors que les manceaux ont généralement un réseau commercial plutôt régional, leurs confrères angevins rayonnent déjà sur l’ensemble du pays. Et que dire de leurs homologues nantais dont les relations commerciales s’étendent jusqu’en Amérique ! Les marchandises commercialisées sont nettement plus diversifiées à Nantes que dans les deux autres villes. Les disparités entres les trois villes apparaissent aussi clairement en ce qui concerne le niveau de fortune. Bien qu’aisés, les épiciers manceaux ne disposent que d’une fortune relativement moyenne au sein du monde marchand. En revanche, de solides fortunes se constituent dans ce commerce à Angers – où, les épiciers sont, en moyenne, les plus riches – et surtout à Nantes, bien que cette dernière soit la ville des contrastes, avec des épiciers à la tête de fortunes colossales (plusieurs centaines de milliers de livres) et d’autres beaucoup plus modestes voire parfois misérables. Le statut social des épiciers est également plus enviable à Angers et à Nantes, avec une participation plus grande aux instances dirigeantes de la cité (municipalité et, surtout, juridiction consulaire, où les épiciers s’investissent de façon plus importante), principalement à Angers d’ailleurs. Ces différences, perceptibles à travers l’exemple des épiciers, ont d’ailleurs perduré pendant longtemps. Ainsi, jusqu’au début du xx^e siècle, à l’image de la boutique de Louis Hermé deux siècles plus tôt, il n’a existé au Mans qu’une seule véritable épicerie fine, située d’ailleurs non loin de l’ancienne place des Halles (actuelle place de la République).

Le beau père de Louis Hermé était Jacques Racois dit Racois du Bourg, notaire royal à Bonnétable, né à Beaufay le 09 06 1664 de Jullian , sieur de Ferreries, (hameau de Beaufay) maître chirurgien et Charlotte Dorizon. Cette famille Racois présente à Torcé et à Beaufay au 16éme siècle fut une famille de marchands et surtout de maitres chirurgiens à Beaufay principalement . Elle fournira aussi nombre de prêtres dont Jacques Racois curé de Coulaines, présent au mariage de Louis Hermé, une religieuse de la Perrigne, Marie Françoise Racois, née en 1703 et Pierre Racois né en 1661 chanoine de l'abbaye St Séverin de Château Landon.
Les Racois descendaient d'une sœur de Michel Aubourg natif de Beaufay recteur de la Sorbonne, puis curé de Marolles et premier principal en 1601 du Collège de St Ouen, créé par le cardinal Claude d'Angennes ( aujourd'hui lycée Montesqueu). Ce prêtre avait donné une métairie qu'il possédait à Courcemont, la Saulnerie,au collège de St OUEN, pour une bourse dédiée à l'éducation d'enfants descendants de ses sœursCette métairie fut confisquée à la Révolution.
